The recipe I make most often comes from BON APPÉTIT. It includes a fridge rise and ours has honey in it. Hubby is a beekeeper, so we’re open to a little honey in our bread. So, while we haven’t harvested honey from our hives (fingers crossed our harvest is coming in May), we use local honey from our beekeeper friends.

Olive oil is really expensive here, but for a special occasion, yes! We don’t have an oven like in the states. Simply no space. Have a countertop DeLonghi oven that should work fine. The rosemary’s in a pot out back, I think. Now, to find the time…
This brought back such vivid memories of pandemic baking when flour was gold and a perfectly dimpled focaccia felt like a small triumph. As you can probably tell, Cecilia, I LOVE focaccia bread :)
Olive trees are pretty easy to grow too. Then we will need a press! But I am looking at how to make olive oil at home. By the time either of us has olives we will have a plan in place!! 😀
Olive oil has become expensive the world over. I can’t run a kitchen without it. Maybe we should plant olive trees in our self sufficient kitchens gardens.
It's good to know this is an independent bread, a bread that can look after itself while I go about my day 😉 not one to necessarily start with though, if I'm new to bread making, I assume?

You don’t need sugar. Just make sure you have fresh yeast!
Now I’m very confused! I thought it was dry yeast. Do I make up the yeast first and then start the recipe?
In the recipe you will be directed to mix the yeast with a little water and let it sit fir a few minutes to hydrate

Me too. I use so much olive oil it might be mistaken for fried bread. 😆
We use olive oil only now with all our cooking. Expensive but worth it. Happy weekend Cecilia.

We have a community garden but we don’t have much options in what we can do. The space is so small. I will pitch the olive tree idea.
